Ingredients
3 tablespoons peanut oil
1½ pounds small Yukon Gold potatoes, cooked (see Basic Boiled Potatoes, page 170), peeled or unpeeled as you like, and cut into ¼-inch-thick slices
3 cloves garlic, peeled, crushed, and chopped (1½ teaspoons)
3 tablespoons chopped flat-leaf parsley
¼ teaspoon salt
1 tablespoon unsalted butter

Directions
Heat the oil in an 8-inch skillet (preferably nonstick), then add the potatoes and sauté over medium to high heat for 6 to 8 minutes, turning halfway through, until browned.
Add the garlic, parsley, salt, and butter and cook, stirring, for 5 to 6 seconds.
Serve hot.
