Ingredients
2 large potatoes, finely grated
2 large potatoes, roughly grated
1 small onion, roughly grated
Salt and pepper to taste
2 tbsp all-purpose flour
1 egg
Oil for frying
Apple sauce to serve

Directions
Heat oil in skillet on medium-high heat.
Squeeze the moisture out of the potatoes, reserving the starch*.
Combine all ingredients and mix well, adding back the leftover starchy stuff from the potatoes.
Form into flat pancakey shapes and fry until golden brown on both sides.
Drain on a wire rack, never on a paper towel.
Serve with applesauce.

*After you have squeezed all of the moisture out of the potatoes, let it settle in a bowl. The gooey stuff at the bottom is the starch. Drain off the water and scoop that out to add to the pancake mixture.
