Ingredients
2 salmon filets, total weight about 4 oz.
Salt and pepper as needed
1 tsp olive oil
1 TBSP butter, melted
2 TBSP pesto
Directions
If the salmon filets are thicker on one end than the other, fold the thin end over to give the whole piece the same thickness.
Sprinkle both sides with a dash of salt.
Use just enough olive oil to get some on each side of the filets.
You don't need a lot.
Bake at 350°F (180°C) for about 5-7 minutes, or until your preferred doneness.
While the fish is baking, make the sauce by mixing the melted butter and the pesto.
Salt and pepper the sauce to taste.
Once fish is finished baking, place on serving plate and dress with the sauce and your favorite garnishes.
