For the pork and beans:
Rinse the beans and add to your pot.
Add 3 cups cold water.
Add 1 tsp salt and tomatoes.
Add your ribs. (You might want to brown these in a skillet first, or you can sauté them first in the Instant Pot if it has that function.)
Coarsely dice the garlic and add to pot.
Cut onions, leeks, and carrots into 1" chunks and add to pot.
Chop the cilantro stems and add to pot.
Add the Italian seasoning, cumin, and jalapeño.
Once your pressure cooker has reached full pressure, set your timer for 1 1/2 hours.
If you are using an Instant Pot, set it for 90 minutes on High Pressure, and do a manual pressure release when done.
For the rice:
Put your rice, water, and the remaining 1/2 tsp of salt into a pot, stir it a few times, and bring it to a boil over high heat.
Once it boils, stir it once more, cover it and lower the heat to very low for about 20-25 minutes.
Don't forget to "fluff" the rice with a fork when it is ready.
