Ingredients
2 slices of bread; I like sourdough for this sandwich.
1 Tbsp butter
2–3 oz goat cheese, softened 💡
1/4 cup fresh blackberries (about 1/2 cup), mashed; or blackberry jam or preserves 💡
3–4 slices of cooked crisp bacon
 
💡Trader Joe's sells (or did sell) a blackberry goat cheese. Or maybe it was blueberry. Either way, it would be great in this sandwich!
Directions
Heat a skillet over medium heat.
Add the butter when the pan is warm.
On one piece of bread, add the cooked bacon.
On the other, add the goat cheese and blackberries.
Combine into a sandwich.
Add to the skillet and cook for about 3-4 minutes on each side.
Remove, slice, and enjoy!

I had a goat cheese and bacon grilled cheese sandwich at a cafe in New York City. I have made it several times since, but never with blackberries. 
Make sure your bacon is crisp, and I like these on sourdough bread.
