Ingredients
For the Marinade:
1½ lb boneless, skinless chicken, cut into 1" cubes
1 cup plain yogurt
2 Tbsp lemon juice
2 tsp ground cumin
2 tsp ground red pepper (or to taste)
2 tsp black pepper
1 tsp ground cinnamon
1 tsp salt
1 inch piece fresh ginger, minced
6 bamboo skewers (6"), soaked in water
For the Sauce:

1 Tbsp unsalted butter
2 cloves garlic, minced
1 jalapeño chile, minced (optional for heat)
2 tsp ground coriander
1 tsp ground cumin
1 tsp paprika
1 tsp garam masala
½ tsp salt
1 (8 oz) can tomato sauce
1 cup whipping cream
¼ cup fresh cilantro, chopped

Directions
Thread chicken onto soaked skewers, whisk together all marinade ingredients, coat chicken, and refrigerate, covered, for at least 1 hour.
Discard excess marinade.
To make sauce:
Melt butter in a skillet over medium heat.
Add garlic and jalapeño; cook 1 minute.
Stir in coriander, cumin, paprika, garam masala, and salt; cook 30 seconds.
Pour in tomato sauce; simmer 15 minutes, stirring occasionally.
Stir in cream; simmer until slightly thickened, about 5 minutes.
To finish:
Grill or broil skewered chicken, turning, until cooked through, about 8 minutes.
Remove chicken from skewers and add to sauce; simmer 5 minutes.
Garnish with cilantro and serve with basmati rice, naan, or pita.
