2 or more medium squash - zucchini preferred. 📋You need enough so that after you have squeezed all the liquid out, you have about 2 cups packed pretty well. About 8-9 ounces (225-255 grams)
1 cup grated cheese** About 4 ounces (113-115 grams)
4 eggs, beaten
chopped parsley - optional; I have no idea if this adds anything. Also, I dunno how much
1 tsp salt
1/2 tsp pepper

non-stick spray or oil spray
**The original recipe called for Wisconsin, brick or Muenster cheese. Our family uses Monterey Jack or Pepper Jack.
I have also tried this with half zucchini and half shredded potatoes (hash browns)
1 cup shredded zucchini (water squeezed out, packed well): 4 - 5 ounces (115-250 grams)
1 cup shredded potatoes (water squeezed out, packed well): 5 - 6 ounces (145-155 grams)
***Yes, this is a note to myself to check the weights the next time I make this. I got these weight conversions off the internet, but I an unsure if these are with the water squeezed out. - Uncle Dave

Directions
You need to squeeze the crap out of the grated zucchini (and potatoes if you use them) to get the water out, with your hands, or twisting it in a dish towel or a cheesecloth, or whatever.
Mix the salt into the grated zucchini and let it sit for a bit.
Beat the eggs really well so there is no stringy stuff in them.
Mix the eggs, zucchini, and cheese together.
Butter a baking dish and spray it with cooking spray or oil spray.
For a single recipe, 9 by 12 should be good.
Put dabs of butter on top. I slice 1/2 TBSP pats and break them into 4 pieces, putting one every two inches or so. Usually end up with 3 x 6 or 4 x 8 pattern depending on the size of the dish.
Bake in a 350°F (180°C) oven until it starts to brown on top and on the edges - about 45 minutes.
