Taquitos
8 breakfast sausage links
8 slices white sandwich bread
French Toast Batter
2 large eggs
1/3 cup whole milk (or half-and-half)
1 tsp vanilla extract
1/2 tsp ground cinnamon
1 Tbsp maple syrup or sugar (optional)
1 pinch salt

For Frying
2 Tbsp butter, divided
2 Tbsp neutral oil (canola or vegetable), divided
 
For Serving
1/2 cup powdered sugar, for coating
1/2 cup maple syrup, for dipping or drizzling

Directions
Cook the Sausage
Cook the sausage links in a skillet over medium heat, turning often, until browned on all sides and cooked through to 160°F (71°C), about 10 to 12 minutes.
Transfer to a paper towel-lined plate to drain and cool slightly.
 
Make the Batter
In a shallow dish, whisk together the eggs, milk, vanilla, cinnamon, maple syrup or sugar (if using), and salt until smooth and fully combined.
 
Roll the Taquitos
Trim the crusts from the bread slices.
Flatten each slice with a rolling pin until thin and even.
Place a cooked sausage link along one edge of each slice.
Roll up tightly, pressing the seam to help it hold.
 
Fry the Taquitos
Wipe out the skillet and set it over medium-low heat.
Add 1 Tbsp of the oil, then add 1 Tbsp of the butter and let it melt and foam.
Dip 4 of the rolls in the batter, turning to coat, and let any excess drip off.
Place them seam-side down in the pan.
Cook, turning as needed, until golden brown on all sides, about 6 to 8 minutes total.
Transfer to a plate.
Wipe out the pan if needed.
Add the remaining oil and butter, and fry the second batch the same way.
 
Finish and Serve
While still warm, generously dust or roll the taquitos in the powdered sugar.
Serve with the maple syrup for dipping or drizzling.

Using precooked sausage links? Just warm them through in the skillet before rolling and you will save yourself about 10 minutes.
To keep the first batch warm while you fry the second, park them on a baking sheet in a 200°F (95°C) oven.
Starting the rolls seam-side down helps seal them shut, so let them sit undisturbed for the first minute or so before turning.
Bread that is a day old flattens and rolls more easily than very fresh bread, and it soaks up the batter without falling apart.
