Ingredients
3 TBS oil or shortening
1 1/2 lbs. raw chicken pieces
2 c. raw rice
1 c. chopped onions
1 c. chopped bell pepper.
1 can beef consommé
1 can water

Directions
Place in deep skillet on high heat oil or shortening, when this is hot, add raw chicken pieces.
Brown both sides, (do not cook fully), remove chicken, set aside.
Brown the rice until almost burnt, stirring constantly.
Remove from heat.
Add chopped onions and chopped bell pepper.
Stir on low heat until vegetables are wilted.
Add consommé and water.
Stir to mix.
Arrange chicken pieces.
Cover tightly and on low heat, cook until rice is tender.
Servings\Yield
Serves 4-6 from one deep skillet
