This Tomato Side Dish transforms canned tomatoes into a rich, aromatic delicacy with whole cloves, peppercorns, and bay leaf infusing every bite. The slow-cooked tomatoes meld beautifully with chopped onion, brown sugar, and bread pieces before being baked to caramelized perfection. A superb companion to roast beef that balances sweet and savory notes.
No Jump Zone
Ingredients
2 large cans solid pack tomatoes
8 whole cloves
8 whole peppercorns
1 bay leaf (at least one inch long)
salt
1/2 yellow onion, chopped
3/4 c. brown sugar
3 or 4 slices white bread, pulled into dime size pieces
2 T. butter

Directions
Put cloves, peppercorns and bay leaf in cheesecloth bag.
Cook tomatoes, un-drained, cheesecloth bag and dash of salt on top of stove very slowly for 30 minutes.
Stir occasionally.
Add onion, sugar, bread and butter.
Place in greased baking dish.
Remove cheesecloth and contents.
Bake at 400° for 1 hour.
