These Pickled Eggs combine tangy flavor with beautiful color for a conversation-starting appetizer. Hard-boiled eggs transform when marinated in a vibrant mixture of sliced beets, onions, vinegar, and sugar. The longer they soak, the more the eggs absorb the stunning ruby color and distinctive flavor. Customize the sweet-tangy balance to your preference for a unique addition to relish trays or charcuterie boards.
Ingredients
1 dozen hard boiled eggs 1 can of sliced beets 1 medium sized onion thinly sliced Equal parts of vinegar and sugar (1/4 to 1/2 cup of each according to taste) About 1/4 t. salt
Directions
Add beets and thinly sliced onions. Heat to boiling point and add hard boiled eggs to hot beets. Let stand overnight or until eggs are thoroughly colored and flavored. This is strictly by guess and by gosh. The proportion of sugar and vinegar is definitely according to each individual taste.
