This hearty Lentil Soup lives up to its name as a stick-to-your-ribs comfort food classic. Packed with protein-rich lentils, carrots, and onions in a flavorful ham or vegetable stock, this simple yet satisfying soup comes together effortlessly in your crock pot. A perfect low-maintenance meal that develops rich flavor as it simmers, with the option to add meat or fresh spinach for extra variety.

Ingredients
2 qts water
3 Tbsp. of Better than Bouillon.. combine these, Ham flavor is best to make a stock , but vegetable can be used
3 medium carrots
1 large red onion, to taste
1/4 tsp of white pepper
1 lb (16 oz) of lentils
1 small can of diced tomatoes...dice your own fresh if you're watching your sodium
2 tsp of oil; canola is good but olive will give it a little more flavor

Directions
Throw all this together at once except the onion.
Put in the crock pot on high for an hour or so and when the lentils are almost soft, add the onions.
You can add a meat at the last few minutes if you wish or chiffonade a few spinach leaves.
It is a hearty soup but remember add what you like and enjoy.
Please serve with onion bread.
