Sliders With Pimento Cheese

These gourmet Sliders With Pimento Cheese combine juicy, perfectly-seasoned beef patties with homemade pimento cheese for an elevated take on mini burgers. The cheese mixture—featuring sharp cheddar, pimentos, and green onions—melts beautifully over the patties while cooking. Served on warm Parker House rolls, these two-bite wonders deliver big flavor in a small package. Perfect for game day gatherings, cocktail parties, or anytime appetizers. Any leftover pimento cheese makes a delicious dip with chips!

Ingredients
4 oz. Extra-sharp cheddar cheese, shredded
1 jar (4 oz.) pimento, drained and finely minced
1 1/2 T finely chopped green onions, white and green portions
1 1/2 tsp salt, divided use
1/8 tsp cayenne pepper
Pinch of black pepper
2 T mayonnaise
1 1/4 lbs ground beef
12 Parker House rolls, each 2 inches wide, warmed
(A later version of this recipe calls for: 1 T mayonnaise and 1½ lbs ground beef.)

Directions
In a bowl, combine cheese, pimento, green onions, 1/2 tsp salt, cayenne and black pepper.
Stir in mayonnaise until incorporated.
Refrigerate pimento cheese until ready to use.
In a bowl, combine ground beef and 1 tsp salt.
Divide into 12 equal portions.
Gently form into balls and shape into small patties.
Heat a nonstick grill pan or barbeque.
Cook burgers over medium heat for 1-2 minutes.
Then flip them and spoon pimento cheese onto burgers.
Cook 1-2 minutes more or until done to your liking.
Serve burgers immediately on rolls with your favorite burger accompaniments.
Any leftover pimento cheese can be melted and served with chips.
