Experience the luxury of Santa Fe French Toast, a signature dish from the Super Chief streamliner. This elevated breakfast features thick-cut homemade-style bread soaked in a rich egg custard, fried to golden perfection, then finished in the oven for a delightful puff. Dusted with confectioners' sugar and served with your choice of accompaniments—a taste of railway dining elegance reimagined for your home kitchen.
Ingredients
3 slices of bread, 3/4-in thick
4 eggs, slightly beaten
1/4 tsp. salt
cooking oil
1 cup half and half
confectioners' sugar
Directions
Use firm, homemade-type bread. Trim crusts and cut diagonally into triangles. Combine eggs, half and half and salt. dip bread in mixture allowing pieces to absorb as much liquid as possible. Fry in about one-half inch cooking oil heated to 325°. When brown on one side, turn and brown on the other. Place in baking sheet and allow to puff in a 400 degree open for 3 - 5 minutes. Drain on paper towels to absorb excess fat. ED: I would suggest draining on a wire rack. Sprinkle with sugar and serve immediately with applesauce, jelly, honey or syrup.
Baked Method: If you wish, you can skip frying the bread in a skillet and do this instead. Preheat oven to 500°. Place bread slices on a well greased cookie sheet. Bake for 5 minutes. Turn. Bake for 5 minutes more.
