These elegant Pear And Brie Quesadillas elevate the traditional Mexican favorite with sophisticated European flavors. Sweet, juicy pears complement creamy Brie cheese, while red onion and serrano chili add savory depth and gentle heat. Ingredients
Vegetable oil, for greasing pan
2 (10-inch) flour tortillas
1 ripe pear, peeled, cored and cut into 16 lengthwise slices
About 6 ounces cold brie cheese, cut into 1/4 inch lengthwise slices
1/4 cup finely chopped red onion
1/2 to 1 teaspoon minced serrano chili
1/2 teaspoon salt, coarse salt preferred

Directions
Preheat oven to 450 degrees.
Generously grease a large jellyroll pan.
Place tortillas on prepared pan.
Arrange pear wedges on each tortilla like the spokes of a wheel, radiating from the center.
Arrange Brie slices between the pear slices.
Sprinkle on onion, chili and salt.
Bake 3 to 5 minutes, or until edges of tortilla are browned and cheese is melted.
Remove from oven and let sit 3 to 5 minutes.
Cut each tortilla into 8 wedges.
