One Rib For Two offers a simple yet elegant meal solution for couples. This unique recipe transforms a single standing rib (about 2½ lbs) into a perfect dinner for two by roasting the frozen meat with olive oil and garlic between two baking potatoes. The cooking method ensures a juicy, flavorful roast with your choice of doneness, while the potatoes absorb the rich beef drippings, creating a complete and romantic dinner.

Ingredients
1 rib of a standing rib roast (about 2 1/2 lbs.)
1 TBS. olive oil
1 small clove garlic, mashed
2 large baking potatoes

Directions
Wrap the meat well and freeze until solid.
Rub the mixture of oil and garlic evenly over the frozen meat.
Stand, rib bone down, on a a rimmed baking sheet between the two potatoes, placed like book-ends.
(Roast frozen, do not thaw).
Roast in a 400° oven for 1 hour and 15 minutes for rare, 1 hour and 25 minutes for medium rare, 1 hour and 35 minutes for well done.
