This Grilled Mustard Chicken transforms simple chicken breasts into a sophisticated yet easy dinner with bold Dijon flavor. The technique of pounding the chicken ensures quick, even cooking while the double-cooking method—first grilled then finished under the broiler—creates perfectly juicy meat with a golden, crispy crust. Ingredients
4 1/2-lb. boneless chicken breasts
4 tbsp. Dijon mustard
4 tbsp. butter
1 cup bread crumbs

Directions
Pound boneless chicken breasts until thin.
Brush both sides with melted butter.
Grill 3-4 minutes on each side.
Put in an oven-proof dish.
Spread one side with coarsely ground Dijon mustard.
Then sprinkle with bread crumbs and dot with butter.
Put under broiler for 3-4 minutes.
