Savor crispy Orange-Crumbed Baked Chicken with a delightful citrus twist! Boneless chicken thighs coated in a zesty blend of orange juice, Dijon mustard, and whole-wheat cracker crumbs create the perfect balance of tangy and savory flavors. Easy to prepare and ready in just 35 minutes, this dish pairs wonderfully with steamed vegetables for a complete meal that's both health-conscious and delicious.

Ingredients
2 T orange or lemon juice
2 T Dijon mustard
1/4 tsp salt
3/4 cup whole-wheat cracker crumbs
1 T orange or lemon zest
1 shallot, finely chopped
1/4 tsp ground pepper
4 skinless boneless chicken thighs

Directions
Preheat oven to 350.
Spray a nonstick baking sheet with nonstick cooking spray.
In a small bowl, combine juice, mustard and salt.
On a sheet of waxed paper, combine cracker crumbs, zest, shallot, and pepper.
Brush chicken on both sides with mustard mixture, then dredge in crumbs, firmly pressing the crumbs to coat both sides. Place the chicken on baking sheet.
Bake 15 minutes.
Turn over and bake until cooked through, 15-20 minutes longer.
