Tandoori-style Cornish Game Hens

Transform your dinner table with Tandoori-style Cornish Game Hens—petite birds marinated in a vibrant blend of yogurt and aromatic spices. This simplified version of the classic Indian dish infuses small game hens with garlic, ginger, cumin, and warm spices for authentic flavor without a traditional tandoor oven. The yogurt marinade tenderizes the meat while creating a flavorful crust during roasting. Impressive yet easy for special occasions!

Ingredients
1 clove garlic, peeled
1 tablespoon coarsely chopped peeled fresh ginger
l/2 cup plain yogurt
2 1/2 teaspoons paprika
1 1/2 teaspoons ground cumin
1/2 teaspoon turmeric

1/4 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
Pinch freshly grated nutmeg
Pinch ground cloves
1/2 teaspoon salt
2 Rock Cornish hens (about 1 1/2 pounds each)

Directions
Combine garlic and ginger in food processor fitted with metal blade.
Process until finely chopped.
Add yogurt, spices and salt. Pulse to combine.
Place birds in large glass or ceramic bowl.
Add yogurt mixture and rub over birds inside and out.
Cover and refrigerate 24 hours, turning occasionally.
Preheat oven to 400 degrees.
Set birds on rack in roasting pan and spoon marinade over them.
Roast until internal temperature of thigh reaches 180 degrees (about 45 to 55 minutes) .
Let stand 5 minutes before serving.
