Transform leftover turkey into a comforting pot pie that's ready in just 30 minutes! This easy skillet-to-oven dish combines tender turkey with colorful bell peppers, mushrooms, and aromatic herbs in a creamy sauce, all topped with golden breadcrumbs. Ingredients
1 Tbsp. olive oil
1/2 cup finely chopped onion
1/4 cup finely diced red bell pepper
1/4 cup finely diced yellow bell pepper
1/4 cup finely chopped carrots
1/4 cup green peas
6 large button mushrooms, quartered

1 clove garlic, chopped
1 lb. diced turkey meat
2 Tbsp. chopped parsley
1 can of cream of chicken soup
1-9 inch pie shell
3/4 cup bread crumbs
sea salt and fresh ground black pepper to taste

Directions
Pre-heat oven to 350°F.
Heat olive oil in medium skillet over medium heat. Sauté onions, bell peppers carrots, peas, mushrooms, and garlic 2 minutes.
Add turkey and parsley. 
Season to taste with sea salt and fresh ground black pepper.
Add soup. Stir to combine.
Pour mixture into pie shell.
Top with bread crumbs.
Bake 25-30 minutes.
