These delicate Chocolate Dipped Creams (affectionately nicknamed 'Neenahs') are a treasured holiday tradition with their melt-in-your-mouth texture and sophisticated presentation. The carefully sifted flour and cornstarch create an incredibly tender cookie that's partially dipped in milk chocolate and optionally finished with festive sprinkles or nuts. Form them into balls, crescents, or the signature thumb-sized bars that inspired their playful nickname. Makes 6 dozen elegant cookies perfect for gifting.

Ingredients
1 cup sifted flour - sift the flour, THEN measure it!
1 tsp. vanilla
1 cup cornstarch
1/8 tsp. salt
1 cup butter, softened
½ cup powdered sugar + powdered sugar for sprinkling
1 cup melted chocolate pieces - I used Hershey Bars; It took 5 1/2 of them. (Or Trader Joe’s milk chocolate)

Directions
  • Sift flour and measure it
  • Then sift flour (again) and cornstarch together.
  • Cream butter.
  • Add sugar gradually to butter
  • Cream well.
  • Add vanilla and salt.
  • Add sifted dry ingredients.
  • Mix well.
  • Refrigerate covered at least 2 - 3 hours.
  • Shape into small balls, crescents or thumb-sized bars. Best size appears to be about .4 oz. You can also do .5 oz., but anything bigger is too big. But also try .3 oz to see if those are big enough for you.
  • Place 2 inches apart on a cookie sheet.
  • Bake at 375° for 15 to 20 minutes. I find that 18 to 19 minutes is the sweet spot, where they start getting a little color to them. I think this also makes them a little sturdier. See below.
  • Roll in powdered sugar while hot, or sift the sugar over the top of the cookies while they are on the cookie sheet.†
  • Allow to cool.
  • Dip one end of each cookie in melted chocolate††.
  • I usually dip four, put them on wherever I am putting them, add whatever I am sprinkling on them while the chocolate is still melty, and keep repeating this process
  • When I do the dipping, I put them on a sheet of wax paper or parchment paper that has been finely dusted with powdered sugar to keep them from sticking.
  • Allow the chocolate to cool and harden. ❗❗I find it is best to use a thin spatula to lift them from the surface they were drying on.
⚠️❗⚠️❗Neenahs are very delicate and break easily if not handled with love.
 
† About powdered sugar: Sometimes, if you cover the whole cookie with powdered sugar, the chocolate won't stick. What I do is this: I make sure the cookies are in rows, and then use a piece of cardboard to protect half of each cookie while sprinkling sugar down the other half down each row. 
†† I have melted the chocolate in the microwave and in a double boiler...double boiler is better!

These are a special family favorite around the holidays. The nickname - Neenahs - comes from the way they look when you shape them into thumb-sized bars and dip one end in melted chocolate. You figure it out.
I make mine over three days: dough one day, which I cover and put in the fridge; bake and powder sugar them the next day; dip them in chocolate and add sprinkles the next.
