Ingredients
2 tsp olive oil
1 onion finely chopped
1 garlic clove, minced
2 cups beef broth
1 cup dried lentils, rinsed and drained
2 cups water
1 cup packed shredded Swiss chard leaves

1 T finely chopped fresh cilantro
1/4 tsp ground cumin
1/4 tsp salt
1/8 tsp ground pepper
2 tsp fresh lemon juice
Fresh cilantro sprigs

Directions
Heat the oil over medium heat.
Sauté the onion and garlic until soft, about 5 min.
Add broth, lentils, and water; bring to a boil.
Reduce heat and simmer, covered, until the lentils are tender, about 45 minutes.
Add the Swiss chard, cilantro, cumin, salt and pepper; cook, stirring once, until the chard wilts, about 5 minutes.
Stir in the lemon juice and serve, garnished with cilantro.
