This light yet satisfying Cream of Cauliflower/Broccoli Soup combines the earthy flavors of both vegetables into one versatile, creamy bowl. Ingredients
28 oz chicken broth
1 large cauliflower
16 oz broccoli
1 diced onion
1 clove of garlic, minced
1 package of fat-free cream cheese

Directions
Cut up vegetables.
Put in a large pot with the broth, onion and garlic.
Cook until soft.
Remove from heat and mash with a potato masher.
Add cream cheese.
Blend until the cheese is melted.
