Simple yet elegant, these Sautéed Artichoke Hearts transform frozen or canned artichokes into a sophisticated appetizer. The artichokes are gently simmered then sautéed in butter until perfectly tender, sprinkled with salt and fresh parsley for bright flavor. This versatile dish works beautifully as both a starter and a side, letting the unique flavor of artichokes shine through minimal preparation. A quick but impressive addition to any meal that celebrates this distinctive vegetable.

Ingredients
2 - 8 1/2-oz. packages of frozen artichoke hearts or 2 9-oz. cans (drained)
6 TBS. butter
Salt to taste
2 TBS. minced parsley

Directions
If using frozen artichoke hearts, thaw them enough to break apart.
Then cook them in 1/4 cup water, covered for 5 minutes.
Drain.

Melt the butter in a skillet and add the artichoke hearts.
Stir often so they are well coated with butter.
Sprinkle with salt and parsley, and serve when thoroughly hot.
Servings\Yield
Serves 4-6 people as a side dish.
