Start your day with California Coffee Cake featuring a buttery, tender crumb and cinnamon-walnut filling. Ingredients
Filling:
1/2 cup packed brown sugar
1/2 cup chopped walnuts
1 tsp. cinnamon
1 TBS. melted butter
1 TBS. flour
Batter:
1 cup sugar

1/2 cup butter
1 1/2 cups flour
2 eggs - separated
2 tsp. baking powder
1 tsp. salt
1/2 cup milk
grated peel of 1 lemon and 1 orange

Directions
  • Mix together filling ingredients and set aside.
  • For batter, begin by sifting together the flour, salt and baking powder.
  • Set aside.
  • Cream butter, add sugar, add yolks.
  • Mix in flour mixture.
  • Beat egg whites until stiff and fold into batter.
  • Pour 4/5 into a greased 9 x 9 pan.
  • Sprinkle filling over batter, then top with remaining batter.
  • Bake at 350° for 40 to 45 minutes.
