Delight guests with these Artichoke Nibbles—a savory appetizer featuring marinated artichoke hearts, sharp cheddar cheese, and aromatic herbs. The unique preparation method utilizes the artichoke marinade to sauté onions and garlic, infusing the entire dish with flavor. Eggs bind the ingredients into a sliceable, protein-rich appetizer that pairs perfectly with tortilla chips, fresh vegetables, or sliced baguette. This versatile appetizer works equally well for casual gatherings or elegant cocktail parties.

Ingredients
2 jars marinated artichoke hearts
1 chopped onion
1 clove garlic, minced
1/2 lb sharp cheddar cheese, grated
4 eggs
1/4 cup dry bread crumbs
1/4 tsp oregano or basil
2 tsp parsley
1/4 tsp Tabasco sauce

Directions
  • Drain 1 jar of artichokes and put marinade in frying pan.
  • Sauté onion and garlic in marinade.
  • Drain other jar and chop artichokes from both jars.
  • Beat eggs.
  • Add bread crumbs, artichokes, cheese, onion, garlic and spices.
  • Mix together and place in a greased baking dish.
  • Bake at 350° for about 30 min.
  • Serve with tortilla chips, sliced fresh vegetables, or sliced French baguette.
