This classic meatloaf recipe combines three different ground meats—beef, pork, and veal (or turkey)—with aromatic vegetables and seasonings for superior flavor and texture. Topped with tomato paste and bacon for extra richness, this hearty main dish forms two substantial loaves that are perfect for family dinners with planned leftovers. The combination of meats creates the perfect balance of flavors while remaining juicy and tender throughout the cooking process.
Ingredients
1 lb. ground pork (not sausage)
2 lbs. lean ground beef
1 lb. ground veal (ED: if you can't find this, use ground turkey)
1/2 med onion, chopped
2 cloves garlic
chopped green pepper

1 can tomato paste or equivalent catsup

Directions
Combine ingredients except tomato paste and bacon.
Make two loaves.
Top with tomato paste and a layer of bacon.
Put meatloafs (meatloaves?) in a baking dish or sheet pan with sides high enough to catch the grease.
Bake at 350° for 1 1/2 to 2 hours.
