Dill Sauce

Elevate any fish dish with this silky Dill Sauce featuring fresh or dried dill, Dijon mustard, and a classic roux base. The sauce combines the bright flavors of dill with the subtle tang of mustard in a creamy milk-based sauce that complements everything from salmon to cod. Make extra roux to keep in the refrigerator for quick sauce preparation anytime.

Ingredients
2 cups milk
2 TBSP fresh or 1 tsp dry dill
1 1/2 tsp Dijon mustard
1/2 cup butter
1/2 cup flour
salt & pepper

Directions
Make the roux:
First make a roux with the butter and flour.
Melt the butter in a thick bottomed sauce pan.
Add the flour and cook 8 - 10 minutes.
(Roux keeps in the fridge as long as butter would.)
To make sauce:
Mix milk, dill and Dijon and heat.
Add 3 TBSP of roux to thicken.
Servings
Makes about 3 cups, to put on fish for up to 12 people.
