Jack Zucchini Chicken combines lean chicken breasts with fresh zucchini and melty jack cheese for a quick, nutritious dinner. The chicken is seasoned with chili powder before being topped with grated zucchini, green onions, and cheese, then baked to perfection. Serve with rice and carrots for a complete meal that comes together in under 30 minutes.

Ingredients
3 medium sized zucchini
1/4 cup chopped green onion
3 TBS. butter
4 boneless, skinless chicken breast
1/4 cup flour
1 1/2 TBS. chili powder
thin slices of jack cheese (enough to cover chicken)
Salt and pepper to taste

Directions
Pre-heat oven to 350°.
Shred zucchini through large holes of shredder and squeeze out water.
Toss zucchini with onion.
Cover chicken with flour and chili mixture and brown in skillet with butter.
Put browned chicken in a baking dish.
Cover with zucchini/onion mixture.
Salt and pepper to taste.
Cover with cheese and bake for about 20 to 25 minutes.
Serve with rice and fresh cooked carrots.
