Indulge in these succulent beef ribs bathed in a tangy citrus-infused sauce that perfectly balances sweet and savory notes. The unique marinade featuring sherry creates melt-in-your-mouth texture, while the homemade sauce with lemon juice, horseradish and orange juice delivers complex flavor in every bite. These oven-baked ribs develop an irresistible sticky exterior while remaining juicy inside. Perfect for those who prefer a lighter alternative to traditional barbecue sauce.

Ingredients
For Ribs:
   2 racks of baby back beef ribs
   2 cups of sherry
   Sauce (recipe follows)

Sauce:

   1/4 cup lemon juice
   1/3 cup tomato-based chili sauce or catsup

   1 teaspoon prepared horseradish
   1 tablespoon Worcestershire sauce
   1/2 teaspoon each salt and paprika
   1/2 cup orange juice
   2 teaspoons dry mustard
   1/4 cup firmly packed brown sugar
   1 clove garlic, minced or pressed

Directions
Marinate ribs in sherry for about 1 hour.
Drain ribs. Arrange ribs in a large roasting pan or broiler pan.
Bake in a 450° oven for 30 minutes to render excess fat. (This can be skipped if the ribs seem to be fairly fat free.)
Remove ribs from oven and discard fat from pan.
Reduce oven temperature to 350°.
Pour half of the sauce evenly over the ribs.
Return to oven and bake until meat is tender when pierced, about 1 hour.
Baste generously every 15 minutes with remaining sauce.
Cut ribs apart before serving.
