Ingredients
5 lb or greater beef rib roast or rolled rump
salt and freshly ground black pepper
4 T butter
Directions
Preheat oven to 500° for at least 20 minutes.
Then rub the meat all over with salt and pepper, and spread butter over it.
Lay the meat on a rack in a roasting pan.
Place beef in the oven and roast for 5 minutes per pound; then switch off the oven and leave the beef in for 2 hours more.
Do not, under any circumstance, open the oven door during this time.
When the 2 hours are up, open door and, without removing the pan from the oven, touch the beef with your finger.
If it feels hot, go ahead and serve it.
If it seems to be lukewarm, close the door, reheat oven at 500° and cook for 10 minutes or so.
Serve on warmed platter.
