Lighten up traditional mashed potatoes with this Cauliflower Mashed Potatoes recipe that offers the best of both worlds. Equal parts potatoes and cauliflower create a creamy, satisfying side dish with fewer carbs than the classic version. Enriched with heavy cream and butter, and seasoned simply with salt, pepper and optional garlic, this versatile accompaniment pairs beautifully with any main dish while sneaking in extra vegetables.

Ingredients
1 lb potatoes - peeled or unpeeled, your choice
1 lb cauliflower
About 1/2 cup heavy whipping cream (add more if the mash is too dry)
1/4 cup butter
salt & pepper to taste
Add garlic if you like; you decide how much.

Directions
Cut potatoes into about 1" chunks.
Cut cauliflower so you have a lot of little florets.
Boil potatoes and cauliflower together until they are tender enough to mash.
I have also microwaved them in a big dish with water.
Drain and then start mixing, adding the whipping cream to reach the consistency that you want.
Add butter, then salt, pepper and optional garlic to taste.
