Make the chicken fried steak while the gravy is cooking.
Pound sirloin with a tenderizing mallet to ¼ inch thick and cut into serving pieces.
In a shallow dish mix together the flour, salt and pepper.
In another shallow dish whisk together the eggs, cream and milk.
Working in batches, dip the steak into the egg mixture, then dredge it in the flour mixture.
Shake off the excess flour, then dip again in the egg mixture.
Dredge once more in the flour mixture, shake off the excess and fry in a large deep skillet in ½ inch of 350°F (175°C) oil.
Fry steaks, turning once, for 6 to 8 minutes or until golden.
Transfer the steaks with tongs to paper towels to drain.
Serve the chicken fried steaks with the cream gravy.
