Ingredients
2 large onions, thinly sliced, kind of shredded
1 cup all-purpose flour
1 tsp baking powder
½ tsp salt
¼ tsp black pepper
¼ tsp paprika
1 cup buttermilk
1 large egg
Vegetable oil, for frying
Optional: Fresh parsley, chopped (for garnish)

Directions
Prepare the onions:
In a large bowl, combine the thinly sliced onions with a pinch of salt.
Let them sit for about 10 minutes to draw out moisture.
Drain any excess liquid.

Make the batter:
In another bowl, whisk together the flour, baking powder, salt, black pepper, and paprika.
In a separate small bowl, mix the buttermilk and egg.
Combine the wet ingredients with the dry ingredients until just mixed.
Do not overmix.

Combine onions and batter:
Fold the drained onions into the batter, ensuring they are well-coated.

Fry the fritters:
In a large skillet or deep fryer, heat vegetable oil over medium heat.
Drop spoonfuls (or use a ¼ or measuring cup) of the onion batter into the hot oil, being careful not to overcrowd the pan. Too many fritters will cause the oil to cool too much.
Fry for about 3-4 minutes on each side, or until golden brown.
⚠️ Remove the fritters with a slotted spoon and drain on a wire rack with paper towels underneath to catch the grease.
You might want to turn them several times while they are frying to ensure even cooking.

Serve:
Serve hot, garnished with fresh parsley if desired.
Enjoy with your favorite dipping sauce!

💬 Uncle Dave says...
For best results, slice the onions as thinly as possible.
🚫 And please, never drain fried food on paper towels. Put them on a wire rack over paper towels!
These fritters are best enjoyed immediately after cooking, but can be reheated in a 350°F (180°C) oven for 5-10 minutes if needed.
